| Galangal (Kha) |
Only
the roots are used for cooking. They are light brown in colour, thickened,
fleshy and have a ginger like rhizomes. They are slightly hot and bitter
with a strong prudent odour. The size is about 2-3 cm. in diameter and 3-5
cm. in length. Galangal is used as a flavouring in many soups e.g. Sour
Shrimp Soup - Tom Yam Kung, Chicken Soup in coconut milk - Gai Tom Kha and
is an important ingredient in making curry pastes. |
